Every Thursday we cut all the cheese in preparation for the weekend farmers markets. We typically cut 50 – 100 lbs of each of our cheeses to sell at the markets. Each piece of cheese is 1/4 to 1/2 lb and gets individually wrapped. With four people working on it, we can generally get all the cheese cut in about 4 hours. Its a team effort, and we are happy to wrap you all the cheese that we’ll bring to your favorite market!
